Back Bay Bistro getting new manager, menu

Back Bay Bistro at Newport Dunes Waterfront Resort and Marina hired a new general manager and plans to launch a new menu at the end of October, according to a news release.

The Newport Beach restaurant named Eric Tabon, who lives in Huntington Beach, as general manager. Tabon has held management positions at restaurants including BlueFin and FitFoods4Life, both in Newport Beach, and Atlanta Lounge and Zero, both of which used to be in Huntington Beach.

“Before embarking on my career in restaurant management, I worked in nearly every capacity of a restaurant from bartender to server,” Tabon was quoted as saying in the release. “I look forward to bringing my vast experience in the business to my new role at the Back Bay Bistro.”

The menu being introduced by executive chef Kurt Schaeffer will feature appetizers of crispy Pacific pan-fried oysters and wild mushroom saute. The new steak options will include a 12-ounce New York, 7-ounce filet mignon and 16-ounce bone-in rib eye, according to the release.

Revamped entrees will feature fresh swordfish topped with sundried tomato tapenade and served with lemon orzo, grilled asparagus and baby carrots; and blackened sea bass topped with a mild chipotle honey glaze and served over grilled herb polenta and sauteed spinach, the release said.
